Tascalate Is The 3,000-Year-Old Chocolate Drink You Should Know About
BY WENDY LEIGH
Thousands of years ago, Mayan societies used maize in many foods and drinks, including tascalate, a 3,000-year-old drink whose composition remains pretty much the same.
Tascalate is made with ground maize, powdered cacao, and red achiote seeds. It's served similarly to hot chocolate in the colder months and is chilled in the summer.
Tascalate in its pure, traditional form contains no alcohol, but it can serve as a tasty base for beloved cocktails containing Mexican spirits such as mezcal.
