Fresh corn is a staple in many countries, and the United States is the world's top consumer today. However, corn began cultivation in Mexico almost 7,000 years ago, giving this country a very long history with the crop; this history is reflected in classic and delicious Mexican dishes like elote, or Mexican corn on the cob.
Elote corn is a famous street food of grilled corn on the cob dressed with cotija cheese, lime, chili powder, and Mexican crema. Sour cream or plain yogurt both work as crema substitutes, and are sometimes used alongside crema, but one easy and delicious swap is to use mayonnaise as your creamy condiment instead.
Whether you can't find crema or just want something richer, mayonnaise will not only give your corn a great creamy taste, but it also acts as a glue for all the mouthwatering toppings.
