Take Venison Meatballs To Another Tier With A Boozy Mushroom Gravy
BY AUSTIN HAVENS-BOWEN
Tasting Table recipe developer Jennine Rye has a show-stopping recipe for venison meatballs, paired with a brandy mushroom gravy to amp up the flavor.
Rye says that the venison's deep and gamey flavor is "paired with a rich, creamy, and earthy brandy mushroom gravy, which combines perfectly to make a wonderfully decadent meal."
The gamey taste of venison can be off-putting to some, and the gravy conceals that a bit. Much of the brandy also cooks out, so you don't need to worry about getting tipsy.
Stock or water and heavy cream also go into the gravy. As for the fungi, you can use standard sliced white button mushrooms or more mature creminis for an earthier flavor.
The only other ingredients you'll need for the gravy are onion, garlic, seasonings, oil or butter, and potentially flour or cornstarch as a thickener.
For a side dish with the meatballs and gravy, go with a choice like mashed potatoes that will soak up the flavorful gravy without taking away from the flavors of the main dish.
Finally, finish dinner off with freshly chopped parsley and pair it with a glass of red wine, which complements the rich flavors of venison and the mushroom gravy.
