Take Grilled Chicken To The Next Level Using Butterflied Drumsticks
BY JUNIPER FINCH
The best drumsticks have a perfect ratio of crispy skin to juicy meat, and the easiest way to achieve that ratio is by butterflying your drumsticks before grilling.
Furthermore, butterflied drumsticks make the cooking process easier by cutting the cooking time in half, ensuring an even cook, and increasing the surface area of your seasonings.
To butterfly chicken drumsticks, identify which side of the drumstick has less skin and lay it down with that side facing up. Then, cut through the meat along the bone.
Make two additional cuts on either side where the meat connects to the bone without separating the meat from the bone completely. This way, they will cook in about 15 minutes.
