For most, a grilled cheese comes together with dependable options like gruyère and cheddar, but there's another — much smaller — filling you should try: cheese curds.
When melted properly, cheese curds make a spectacularly gooey addition, though they do take more heat to break down. Simply add a layer between bread slices prior to cooking.
The curds melt evenly, and a small amount might even ooze out of the side, creating a picture-perfect result. Plus, they'll meld well with other ingredients, too.
