Swap Your Baking Dish For Crisp, Crackly Scalloped Potatoes
BY JOE DILLARD
Using a cast-iron skillet for your scalloped potatoes can help to cook them better than a standard baking pan, thanks to cast iron’s unmatched level of heat retention.
Cast iron's excellent heat retention leads to more even cooking throughout the whole casserole, as well as better browning on the outside for a crispy exterior.
For perfect scalloped potatoes, start by layering your thinly sliced potatoes in a well-seasoned cast-iron skillet. Top the potatoes evenly with the cream mixture and some cheese.
Once the prep work is done, stick the skillet in the oven to bake a pan full of potatoes with a crispy, golden crust on the outside and creamy perfection on the inside.
