While dried herbs don't require chopping and last longer than their fresh counterparts, they're not always ideal for cooking. When you make pasta, you should avoid dried basil.
When the herb is dehydrated, its tastes and smells change. Instead of sweet, slightly peppery notes of fresh basil, you'll get minty flavors that can alter your meal.
This happens because new compounds form when the basil leaves are dried, bringing the minty flavors to the forefront and leaving other notes in the background.
