Skip The Frying And Turn Canned Chickpeas Into Baked Falafel Cakes
BY ELIZABETH OKOSUN
Falafels, a popular Middle Eastern street food, are deep-fried cakes made of chickpeas with fragrant herbs and spices. They can be involved to make, unless you modify the recipe.
Baking your falafel mixture into one large cake requires no vats of sizzling oil or time spent forming smaller patties. The dish is even easier to make if you use canned chickpeas.
Using a food processor or a fork, mash canned chickpeas with chopped onions, parsley, a beaten egg, salt, and spices. Next, heat an oven-safe skillet with a coating of olive oil.
Add all of the chickpea mixture to the skillet and brush the top with more oil. Cook on the stove for 5 minutes for a crispy exterior, or move it to the oven right away.
Bake the falafel for 20 minutes at 350 F, then drizzle with olive oil and tahini. Enjoy it on its own or as part of a mezze spread with kebabs, olives, grapes, and baba ghanoush.
