Serve Eggs In Bacon Cups For A Simple Handheld Breakfast
BY MICHELLE WELSCH
Egg-filled pieces of crispy bacon are a protein-packed, bite-size breakfast. You can grab them to eat on the go, or even make a batch and reheat them for an afternoon snack.
If you're feeding a large group, preparing these convenient pieces of savory goodness in advance can help you feed a crowd without too much cleanup.
Use bacon to line a muffin tin, bake the "shells" for 10 minutes, then remove the tray and fill each cup with an egg before putting it back in the oven.
Bake the eggs to your preferred doneness. These bacon and egg bites are even better if you add herbs, seasonings, cheese, and/or chopped vegetables.
You can then serve your egg-filled bacon cups with side dishes on individual plates, or leave them on a serving platter for guests to help themselves.
