Roast Cod On A Bed Of Potatoes For An Elegant Presentation

Cod and potatoes are a match made in heaven, whether they're simmered side-by-side in a rich stew or get the deep-fry treatment for a fish and chips. Humble dishes like these are classic for a reason, but we eat with our eyes first, so for a well-presented dish that can make this combo the star of a dinner party, try this technique.
You don't have to change much about a good recipe for baked cod and potatoes in order to make it look nice. Instead of chopping your spuds into chunks, draw inspiration from the French layered potato dish Pommes Anna and thinly slice the potatoes, then arrange them into overlapping "shingles" on a baking sheet.
Add melted butter and herbs to the potatoes and roast them until they start to get crisp. On top of the spuds, add a thick filet of cod skin-side down, and top with more fresh herbs, a slice of lemon, and an extra pat of butter — once the cod is done cooking, you'll have beautiful-looking fish on a bed of crispy and moist potatoes.
