Put A Greek Twist On Panzanella Salad With Kalamata Olives And Feta

To give traditional Italian panzanella salad a Greek twist, incorporate the ingredients used in Greek horiatiki salad: Kalamata olives and feta cheese.
The salty olives will complement the acidity from the tomatoes while the creaminess of feta will contrast with the salad's crunchy bread.
The bread is arguably the most important of a panzanella salad. Ciabatta and sourdough are commonly used, but to lean into the Greek inspiration, use pita bread.
Combine Greek olive oil with red wine vinegar, lemon juice, garlic, and dried herbs like oregano to complete the vinaigrette.
