Patatosalata Is The Mayo-Free, Greek Potato Salad You Should Try

From spanakopita and moussaka to gyros and halloumi, there are many Greek foods beloved outside of the country, but less well-known dishes like patatosalata also deserve attention.
Patatosalata is a mayo-free Mediterranean version of potato salad, made with boiled waxy potatoes, chopped onion, and a simple yet delicious Greek salad dressing.
Patatosalata is lighter and lower in cholesterol than an American-style potato salad, and packs a punch of flavor from olive oil, lemon, garlic, pepper, and herbs.
To make Greek potato salad, boil waxy potatoes, which stay creamy and hold their shape. Drain and dice them, then toss with chopped red or white onions, the dressing, and parsley.
Different recipes feature other Mediterranean staples like kalamata olives, crumbled feta, capers, and red bell peppers, along with Dijon mustard or Greek yogurt in the dressing.
