Pappa Al Pomodoro Is The Bright Tuscan Tomato Stew Produced With Stale Bread
BY AUTUMN SWIERS
Tuscan pappa al pomodoro is a hearty soup with a simple recipe of tomato, garlic, basil, a generous drizzle of olive oil, and a thick slab of stale bread at the bottom of the bowl.
The bread soaks up the tomato broth and morphs into a custard-like thickener, similar to "acquacotta," another Tuscan bread soup.
You can make pappa al pomodoro using fresh or canned tomatoes and stale bread that is not yet petrified solid so that it can be sliced easily.
This one-pot meal is ready to enjoy in about 30 minutes. Serve warm or chilled, and garnish with torn fresh basil leaves, cracked black pepper, and olive oil.
