If you’re struggling to make your roasted potatoes crispy, there's a trick you can try after you boil your potatoes, but before you roast them. and it requires no extra effort.
After boiling your potatoes, spread them out on a lined baking sheet. Instead of roasting them right away, simply let them sit for a while to cool off and vent excess steam.
After a few minutes of letting them rest at room temperature, toss the potatoes in oil and bake them in the oven, where their exteriors will crisp up and brown beautifully.
Spuds are almost 80% water, so they need to lose a lot of liquid before they can crisp up. While boiling them does speed up their cooking time, the water adds even more moisture.
Letting your potatoes release their steam is key. The residual heat evaporates moisture from the surface of the pieces, so they fry in the oven instead of letting out more water.
