Michael Symon's Simple Tips For Perfect Mashed Potatoes
By AMANDA BRETZ
Michael Symon is known as a master of cooking meat, but also creates plenty of recipes for delicious side dishes and more. On his popular Twitter page, Symon shared some top tips to take mashed potatoes to the next level, including his recommendations for technique, equipment, and ingredient ratios.
Symon recommends running boiled potatoes through a ricer rather than using a food processor or potato masher, since he believes that this special tool produces the fluffiest results. He also advises to skip out milk and use a richer dairy ingredient like butter, and personally uses a 2:1 ratio of potatoes to butter for his ideal mash.
Symon cautions against using electric mixers to add ingredients to the potatoes, since it will “make them pasty,” and recommends whisking the ingredients together by hand. To follow the chef's cooking technique, boil potatoes in salted water, drain them, and leave them on the heat for about 30 seconds before adding them to the ricer.
