Martha Stewart's Unique Trick To Literally Boost Eggplant Parmesan

Martha Stewart's no-fry eggplant Parmesan features towers of eggplant layered with cheese, sauce, and basil leaves for a hearty, literally elevated take on the dish.
In an Instagram post, Stewart explains that her eggplant Parmesan towers are piled with "mozzarella, Parmesan, thick tomato sauce, fresh basil leaves, and salt and pepper."
The towers are stacked three to four slices high and then topped off with fresh bread crumbs before being baked to create mounds of crispy eggplant and gooey cheese.
While this technique works with any recipe, Stewart begins her own by salting the slices of two eggplants and letting them sit to draw out excess moisture.
When ready, brush the eggplant slices in oil, roast them in the oven, and start assembling. You can also substitute zucchini or even thinly sliced chicken instead of eggplant.
