Marinate Your Poultry First For Extra Flavorful Chicken Parmesan
BY JOHN TOLLEY
As the name implies, chicken is the star of the show when it comes to chicken Parmesan, and the best way to take your chicken up a notch is to marinate it first.
A marinade not only adds flavor to the chicken but also tenderizes the meat, ensuring your chicken Parmesan has a rich, mouthwatering taste and a juicy texture.
When marinating, keep the flavors of your dish in mind. You’ll want to choose herbs, spices, and a tenderizer that play well with the breadcrumbs, cheese, and tomato sauce.
A great base would be a dry Italian white wine to add acid and tenderize the meat. Then add olive oil, garlic, rosemary, basil, oregano, and chili flakes to round out the marinade.
For a lighter marinade, start with lemon juice as a bright, tenderizing base and add olive oil, salt, oregano, and black pepper to add a bit of zest to an otherwise rich dish.
