If all your pantry has to offer is a cheap wine you picked up hastily months ago, a simple trick can make it taste much better: let the wine chill.
Bad wines tend to be rife with unstructured and unbalanced flavors, which start with the smell. Since 80% of the taste is smell, a bad-smelling wine will also typically taste bad.
Research shows that foods send stronger signals from the nose and the taste buds to the brain at 60-95 degrees Fahrenheit, so chilling a bad wine inhibits its poor flavor.
