Lose The Lattice Design And Try Baking Your Next Pie With A Honeycomb Crust
BY Amanda Berrill
While lattice design on a pie crust is a timeless, stunning effect, not everyone has the skills, technique, or patience to craft them. So, consider making honeycomb crust instead.
This method is easier, but it can still give you that showstopper of a pie. It also offers a few advantages over other methods, resulting in a crispier and tastier crust.
First, there's no need to cut perfectly straight, even strips of dough that require frequent handling, reducing the risk of the pie dough getting too warm or overworked.
The holes also leave ample room for the steam to escape, so the pie fillings cook well without retaining too much excess moisture that can cause a soggy-bottomed crust.
You can give the crust a honeycomb look by using a small round tool to cut out holes in the dough. You can also use a small cutter or the large end of a metal piping.
