Making noodles from scratch can make any stir fry way more delicious. Loh shi fun, popular in Hong Kong, Malaysia, and beyond, are a tasty and simple noodle variety to make.
These noodles have a delicate consistency, slight chewiness, and a propensity to sop up any flavors you add to your wok or pan. They’re also rice-based, making them gluten-free.
Loh shi fun are made of rice flour, corn starch, and tapioca starch. Boiling water is poured over the flour mixture to and partially cook it and change its consistency.
The dough is rolled out and cut into small pieces before being boiled. The noodles can then be added to a stir fry with whatever sauces and ingredients you’d like.
The noodles are delicious with a soy-based sauce, minced pork, and mung bean sprouts. They also go well with chicken and prawns alongside a brighter sauce made with calamansi lime.
