Lidia Bastianich's Trick For Stretching Out Pasta Sauce
By SHAYE GLISSON
Have you ever cooked your favorite pasta recipe just to realize that you don't have enough sauce? Thankfully, chef Lidia Bastianich has a pasta sauce hack for stretching the amount of sauce you have, so you can feed everyone in your family.
According to Bastianich, you can stretch your sauce by adding pasta water to the mixture. She suggests adding some of the reserved pasta water to the sauce mixture and simmering it for a few minutes so the pasta may absorb the liquid entirely.
Adding pasta water is effective because when pasta is added to boiling water, starch is released, helping to thicken the sauce and giving you more sauce for the naked noodles. So use Lidia Bastianich's saucy method the next time you're in a bind and need extra sauce.
