Level Up Canned Corn By Giving It An Elote Transformation

You can easily upgrade canned corn with the flavors of elote, a type of grilled Mexican street corn with mayo, queso fresco, lime juice, spices, and chili powder.
Elote is also served as a corn-off-the-cob salad called esquites. Canned corn makes esquites super quick to make, and all the spices and flavorings enliven the cheap canned veggie.
Tasting Table's esquites recipe includes one red pepper, one red onion, one jalapeño, cilantro, mayonnaise, sour cream, a few limes, cotija cheese, avocado oil, salt, and Tajin.
To make the salad, drain the canned corn, then roast it in a pan with oil for 10 minutes until slightly charred. Finely chop the other ingredients and prepare the dressing.
Sour cream, mayo, lime juice, and spices go into the dressing. Mix the corn, diced veggies, and cheese together, then toss with the dressing to complete the dish.
