Kentucky Potatoes Are A Slow-Cooked Cheesy Discovery
BY WENDY MEAD
Slow cookers let you off the hook while they do all the cooking, and beyond the typical stews and braises, they’re essential for making perfectly cheesy Kentucky potatoes.
Kentucky potatoes are a bit like scalloped potatoes, but thanks to use of the slow cooker and frozen potatoes, there’s less effort involved in making them.
The dish is usually made of a bag of frozen potatoes O’Brien, or diced potatoes with peppers and onions, cream of potato soup, sour cream, and shredded cheddar.
Simply stir the ingredients together in a crock pot, add a bit of salt and pepper, and then set the crockpot on high. After a few hours, you’ll have a delicious and filling meal.
If you’d like to experiment with the recipe, try using cream of mushroom soup, swapping in Gruyere or Emmental cheeses, or adding chopped ham or bacon.
Once the dish is finished, add some shredded cheese or chopped chives on top, then serve as a side dish or main course with the flavors of the potato-loving state of Kentucky.
