Julia Child's Tip For Tender Roasted Asparagus

Celebrity chef Julia Child was one of the greats when it came to home cooking tips and tricks, including those related to roasting vegetables. Roasting vegetables (particularly asparagus) is one of the more fundamental cooking techniques that’s quick and easy, but Child recommended taking the roasting process even further by adding one more step.
Peeling asparagus is key to maximize the vegetable's tender potential, and Child promised it would be well worth the extra effort. If you peel away the hard and tough outer layer on your asparagus, you'll help your asparagus cook more evenly and consistently, giving you perfectly tender results.
Chef Sara Moulton, who once worked with Child, elaborated on Child’s rationale: [Child] was adamant: If asparagus gets thicker than a third of an inch (in diameter toward the bottom), peel it." So, next time you prepare asparagus, channel your inner Child and peel it prior to roasting like you would any other vegetable.
