Julia Child's Game-Changing Advice For Finishing Caramel Sauce

Making a homemade caramel sauce can seem intimidating due to the small margin for error. If you don’t watch it like a hawk, it will end up sticking to the side of the pot.
Luckily, Julia Child left behind the advice to address this potential pitfall: trap moisture in your pot with a lid.
Child instructs home cooks to bring the caramel to a boil with the lid on. When it begins boiling, remove the lid and continue to boil to your desired color and consistency.
Once your caramel is how you like it, pop the lid back on and place your pot in hot water. The steam and the heat of the water bath keep the caramel from hardening.
