Joe Froggers Is The Colonial-Era Cookie With A Dash Of Rum
BY KATHERINE BECK
With an amusing name, long history, and spiced molasses flavor, the Joe Frogger cookie is a beloved Southern classic and should be a staple in your baking repertoire.
This cookie originated in the 1700s in Massachusetts, and its key ingredients, molasses and rum, were popular staple ingredients in the area during that time.
The cookie was likely invented at a tavern owned by a free African American man, Joseph Brown, and his wife Lucretia, whose specialty was cookies made in an iron skillet.
One theory about the Joe Frogger name states that as the batter spread out on the skillet, the shape resembled a frog with legs. However, today the cookies are always round.
Similar to gingerbread, Joe Froggers use spices like ginger, cloves, allspice, and nutmeg, along with sugar, dark molasses, and dark rum for a sweet and spicy flavor.
