Jalapeños And Cheese Are All You Require To Spice Up Gameday Cornbread
BY AUTUMN SWIERS
As foodies gear up for football season, cornbread often ends up on game day menu plans, and jalapeños and cheese can make an average recipe much more exciting.
Jalapeños’ bright, grassy flavor adds heat and complexity to cornbread, while cheese adds some gooey texture. All you have to do is mix these into your batter.
Slice the peppers into coins and use grated cheese for easy mixing. For aesthetic bonus points, you could press a few jalapeño slices into the top of your batter before baking.
You can even use jarred pickled jalapeños to cut down on prep time and add an acidic, briny flavor. Taste your peppers to gauge their spiciness before tossing them in your bread.
Start with two cups of shredded cheese for a 9 x 13-inch pan of cornbread. Use bold pepper jack or sharp cheddar or a milder cotija, white cheddar, Colby, or Monterey Jack.
Any way you bake it, this cornbread is easy to carry along in a tin-foil-wrapped baking dish, making it the perfect dish to share at tailgates and barbecues this fall.
