Is It Dangerous To Eat Leftover Rice?

When it comes to rice, spores of a bacteria called Bacillus cereus are known to breed in the starch. However, with proper storage, leftover rice is perfectly safe to eat.
Leftover rice is easy to repurpose in a variety of ways. Some dishes, such as fried rice, even benefit from the leftovers due to the way the starch in rice reacts to being chilled.
The real dangers of eating leftover rice arise if it's not cooled properly before being reheated. Room temperature is the most dangerous environment for leftover rice.
When properly stored, rice can be kept in the refrigerator for three to five days. When it’s time to reheat your rice, aim for a temperature of 165 degrees F.
