Iowa's Scotcheroo Is The Rice Krispies Treat Hybrid You Need To Eat
BY MICHELLE WELSCH
If you imagine a Rice Krispie mixed with peanut butter, chocolate, and butterscotch, you’ll have the Iowan treat known as a Scotcheroo.
While the exact origin of the Scotcheroo is unknown, the treat has an indisputable hold over the dessert preferences of Iowa and the American Midwest.
Although the treat is made with simple ingredients, it takes some time to set. First, combine your puffed rice cereal with warm honey, sugar, vanilla extract, and peanut butter.
Then place your mixture in a pan lined with parchment paper. Coat it with melted chocolate and butterscotch, and refrigerate for at least two hours to let it set.
Feel free to experiment with the recipe by adding sea salt, marshmallows, shredded coconut, chopped nuts, a splash of bourbon or Scotch, or whatever you please.
