Instead Of Throwing Out Overcooked Salmon, Here's What To Do
By JENNIFER SWEENIE
Dry, overcooked salmon seems unappealing to eat, but there are ways to make it delicious again instead of throwing it out. All you need to do is add back what was lost: Moisture.
Instead of serving it alone as the main course, overcooked salmon can be combined with moist ingredients to create something that hides its flaws and makes it tasty again.
You can make a salmon salad with plenty of mayo and Dijon mustard, add it to creamy and saucy pastas, or flake it into a brothy seafood chowder or curry.
The salmon can even be whipped in the food processor, formed into patties, then seared and served with a creamy sauce for amazing salmon cakes or burgers.
