Instead Of Lamb, Use Portobello Mushrooms For Savory Vegetarian Gyros

Whether grilled, baked, or minced, portobello mushrooms make a fantastic meat substitute, as they contain lots of savory glutamates, or meaty, umami flavor compounds.
Portobellos are also excellent in vegetarian gyros. In addition to a meaty flavor, their texture mimics the hearty mouthfeel of tender strips of lamb when sliced.
To make mushroom gyros, remove the gills from each portobellos's base, cut them into thick slices, and coat them in Greek seasonings such as lemon, garlic, marjoram, and dill.
Fry the mushrooms until tender before piling them into a warm pita with a dollop of cooling tzatziki and a handful of fresh salad. Add feta for a salty taste and creamy texture.
You could even add a dash of chili flakes to amp up the heat or sprinkle in more Mediterranean herbs, such as oregano or rosemary, for an appetizing aroma.
