Include Mashed Potatoes In Onion Soup For The Epitome Of Comfort

Instead of heating up your leftover mashed potatoes and eating them as-is, get more creative by adding them to onion soup for an extra-rich meal that takes very little effort.
This recipe is like a hybrid of classic French onion soup and creamy potato soup. The mashed potatoes work as a thickener, adding flavor instead of dulling it like flour would.
Mashed potatoes also incorporate into your soup more easily than flour or cornstarch, with no lumps. You can even keep the dish vegan by using plant-based ingredients.
Just whip up a batch of onion soup using your normal recipe, going with classic French or another kind like Irish onion soup. Then, stir in a dollop of mashed potatoes.
You can add more or less potatoes to make the soup as thick or thin as you like. A high-quality homemade meat or vegetable broth makes this dish even better.
To serve the soup, top each oven-safe bowl with a slice of toasted bread and Gruyère or Irish cheddar cheese, then broil until the cheese melts. Finish with chopped scallions.
