Ina Garten's Secret Method For Perfect Hamburgers

Hamburgers are quintessential American food and are so popular that even non-meat eaters have been enjoying all kinds of meatless versions for years. Making burgers at home can be tricky, but “Barefoot Contessa” host Ina Garten has a two-fold trick to get a perfectly juicy hamburger.
The first part is to use an 80:20 mix for your fresh ground beef, as the fat content is essential to keeping the burgers juicy. Garten uses limited seasonings (salt, pepper, and dried mustard) and no egg or breadcrumbs, as she likes to let the beef speak for itself.
Garten’s second trick is to freeze the beef patties for exactly 15 minutes after they’re formed. This way, the meat will get a great sear but will remain tender and juicy while cooking, whether for grilling or pan cooking.
