Ina Garten's Mashed Potato Replacement Is Just As Creamy As The Real Thing

Finding a low-carb substitute for mashed potatoes that still has a rich and creamy texture can be difficult. Chef Ina Garten claims that she has the recipe you’re looking for.
Garten's celery root and chickpea puree is reminiscent of coarsely mashed potatoes, and is full of flavor from lemon and Parmesan cheese.
Celery root, also known as celeriac, is a vegetable grown for its edible bulb. Its flavor is similar to an earthy turnip crossed with crisp celery and potato.
In Garten's recipe, the celery root is peeled and diced, then boiled chicken or vegetable stock until tender and mashed just like potatoes.
Pour the mashed celeriac, the cooking liquid, and chickpeas into a food processor fitted with a steel blade. Process until coarsely pureed, then reheat over a low flame.
In a bowl, combine olive oil, thyme, lemon zest, lemon juice, salt, and pepper. Whisk it into the puree, and stir in the Parmesan off from the heat for a spectacular side dish.
