Ina Garten's Go-To Cocoa Powder For Flavorful Cakes

Celebrity chef Ina Garten isn’t just known for her simple breakfast recipes and one-pan dinners — she’s also a pro at making delicious and comforting desserts. One of her favorite desserts is chocolate cake, and her secret for achieving a high-impact chocolatey flavor lies in choosing the right cocoa powder.
Garten’s go-to cocoa powder is Pernigotti, a Dutch process cocoa powder that’s washed with an alkaline solution to neutralize its natural acidity. It contains a hint of real ground vanilla beans and a higher cocoa butter fat content than others (between 22% and 24%), which results in a richer chocolate profile.
Unfortunately, it's hard to find Pernigotti cocoa in stores, since the Italian chocolate company of the same name closed in 2018. However, you can find the same dark, unsweetened cocoa powder online at ChefShop, which claims that its product is sourced directly from the original maker of Pernigotti's.
