Ina Garten's French Potato Salad Features A Dash Of Crisp Wine

Chef Ina Garten is known for amping up potato dishes, and when it comes to her French potato salad, she likes the quick and easy addition of white wine.
French potato salad is typically a refreshed version of the classic, but it's a highly acidic mix of vinegar and Dijon mustard that can be one-note, even with plenty of herbs.
Garten says white wine brings complexity to her French potato salad without overpowering it. It can also enhance the flavors in the other ingredients, making the dish tastier.
Garten's recipe has herbs, scallions, and Champagne vinegar. It all pairs perfectly with the white wine and chicken stock that she adds to the warm potatoes.
As the wine isn’t being cooked down, its flavor will be standing out more, so using a crisp, clean white wine like Pinot Grigio or Sauvignon Blanc works best.
Although the alcohol in the wine isn’t cooked off, the few tablespoons used won't taste boozy but will instead help release other ingredients' flavors.
