If You're Not Frying Your Eggs With Chickpeas, You're Doing It Incorrectly
BY ELIZABETH OKOSUN
To bulk up your morning fried eggs, add chickpeas for an earthy, nutty taste and more protein. Like eggs, chickpeas are mild, so you can play with adding different flavors.
Let a layer of chickpeas crisp up in a pan, then make spaces in the layer and crack an egg in each. Once the eggs cook, remove them and the chickpeas from the pan.
The final dish is delicious on its own, but also makes a great addition to veggie burgers, a high-protein topping for grain bowls, or an addition to baked autumnal salads.
Chickpeas and eggs can be a more filling one-pan meal with diced tomatoes, onions, bell peppers, and spinach, or an on-the-go breakfast when stuffed into a pita bread.
