How To Use Freshly Cooked Grains To Make Fried Rice

While many use leftovers to make fried rice, there is a way to cook the dish with fresh ingredients. The trick involves drying out the freshly cooked version.
Wash your rice as normal, then coat it with cooking oil to keep the grains sticking together. You can rub the oil on with your hands or toss and sauté it with hot oil in a pan.
Cook it over the stovetop or use a rice cooker, but use less water than you typically would. Decreasing the amount of water by about 1/4 cup will get the best results.
The final step is to lay the rice out on an even layer on a baking sheet to cool and dry. You can speed up the process using the refrigerator or freezer.
Once completely cooled, the fried rice is ready to be transformed. If there are large, lumpy clumps, break them up before cooking the dish as you usually would.
