How To Turn Milk Into Evaporated Milk
By LAUREN CAHN
Evaporated milk can amp up the creaminess of dishes such as slow-cooker mac and cheese, sweet potato pies. and all sorts of casseroles. Though this product has a very long shelf life, you don’t even have to have a can on hand when inspiration strikes, since turning fresh milk into evaporated milk is safe and easy to do.
You can turn pretty much any milk you have into evaporated milk on your stovetop, in a matter of mere minutes. As an added bonus, evaporating your own milk also translates to no preservatives and less waste, but you do have to remember that homemade evaporated milk is more perishable and not shelf-stable.
Simply add your milk to a saucepan over medium heat, stir constantly as it comes to a boil, and then just keep stirring until the milk has reduced to about 60% of whatever quantity you started out with. The process should take around 30 minutes to make the equivalent of a 12-ounce can of evaporated milk from the store.
