How To Start Prepping Your Sweet Potato Pies Well In Advance Of The Holidays

The holidays tend to push home cooks to their limit, with multiple dishes needing to be prepared and served at once. Some wise meal prep can take a huge load off your shoulders.
If sweet potato pie is part of your holiday menu, boil and mash the sweet potatoes for the filling in advance. The sweet potato mash or puree will keep for months in the freezer.
When you're ready to bake, you simply thaw the mash, whisk it together with your other filling ingredients, and pour it into the crust to bake.
While you can assemble your whole pie and freeze it, it will only keep between three to four months, and the filling will likely crack or weep liquid when thawed.
Peel, cube, boil sweet potatoes until tender, then drain and mash them. Let the mash cool completely before portioning it into a zip-lock freezer bag or multiple bags.
Flatten the bags with your hands to squeeze out as much air as possible, then seal them tightly. Label, date, and freeze them and you'll have a much quicker pie come the holidays.
