How To Sneak Bagged Salad Leftovers Into Your Baked Goods
BY EMILY BOYETTE
Most salad kits contain mild greens like romaine, spinach, and arugula, so if you're tired of salads, these greens make a great and non-overbearing addition to baked goods.
To try this, just blitz your greens with a few splashes of milk in the blender until completely smooth, then fold into the batter of pancakes, muffins, or even cake.
Though this may sound unusual or risky, a big batch of greens can shrink down into a surprisingly small amount of liquid, making little difference in your batter’s consistency.
While you have the blender out, try adding the greens into a smoothie. Ingredients like fruit and sweeteners in your desserts are so flavorful, you'd never notice the greens.
