How To Properly Store Fresh Bok Choy

To properly store bok choy, wrap it in a damp paper towel or cloth and put it in an unsealed plastic bag in the crisper drawer of the fridge, which maintains a high humidity level.
Keep bok choy away from ethylene gas producers, such as apples and bananas, which will shorten the lifespan of bok choy. Washing before storing can also cause it to rot faster.
Stored properly, bok choy should be good in the fridge for up to a week. To further extend its life, select bok choy with vibrant green leaves and firm white stems.
You can also freeze bok choy to further extend its shelf life by blanching it for 2 minutes and then dunking it in water for 2 minutes. Ensure it is dry before freezing.
