How To Oven-Cook Cabbage For A Side Dish Made Simple
BY Julia Holland
When roasted in the oven, cabbage caramelizes and browns, yielding a side dish with a sweet and savory flavor, soft texture, and crunchy, browned edges with a smoky charred finish.
While green and red cabbage are ideal for the oven, you should not caramelize daintier varieties like Napa or savoy. The fastest way to roast cabbage is by cutting it into wedges.
Roasting wedges cuts prep time and doesn't require flipping them as they cook. You can also roast shredded cabbage (thin strips of cored wedges) and stir them midway into cooking.
