How To Keep Cucumber Slices Crisp For Delicate Sandwiches
By LAUREN CAHN
Cucumbers have a refreshing, watery crunch due to their high water content, but this also means that dishes like cucumber sandwiches can quickly get soggy.
To avoid soggy cucumber sandwiches, all you need to do is salt the cucumbers, which works due to the osmotic process that draws out the veggie’s excess moisture.
To try this, place your cucumber slices in a colander or lay them out on a paper towel, add a generous pinch of salt, and wait about 20 minutes or so for the moisture to come out.
Although most of the salt will be washed away with the excess water, this process will give your cucumbers some added saltiness; the longer they sit, the saltier they’ll be.
