How Ina Garten Elevates Cheap Chicken Cuts With Luxuriously Creamy Sauce

Ina Garten’s cooking philosophy is about blending fancy and casual ingredients and techniques for simple yet elegant meals. She even knows how to class up cheap cuts of meat.
Featured in her 2018 cookbook, "Cook Like a Pro," Garten has a recipe for Chicken Thighs with Creamy Mustard Sauce. It marries an inexpensive cut of meat with a luxurious sauce.
The chicken is pounded thin, which can tenderize even cheap cuts, then coated in a Parmesan breading and sauteed. The sauce is made of white wine, crème fraîche, and mustard.
For an Italian twist, add tomato paste and garlic to the sauce. Try sweet chili sauce, soy sauce, and lime for an Asian fusion, or use horseradish or wasabi in place of mustard.
Garten says, "I like doing the high-low thing: Taking an inexpensive cut of meat like chicken thighs and serving it with a rich, flavorful sauce." You're sure to agree with her.
