How Giada De Laurentiis Takes Potato Pizza To The Next Level

Italian potato pizza can be made with a traditional pizza crust or more rustic, crispy focaccia bread, topped with thinly sliced potatoes that are baked until tender and crispy. This kind of pie is great when made simply, but it can really shine with the addition of complimentary flavors, such as chef Giada De Laurentiis's recommendations.
De Laurentiis is known for her inventive twists on classic dishes, and her version of potato pizza is no exception. She uses shallots on her pizza in place of the more common onions for a more delicate flavor, and also likes adding a touch of spice with red pepper flakes, which give the pizza a nice balance of heat and sweetness.
Giada also loves to add some Leccino olives, which are meaty, flavorful, and provide a nice contrast to the potatoes. To top it all off, she adds a generous sprinkle of freshly grated Parmesan cheese for a nutty, salty flavor to complement the other ingredients before baking the potato pizza until the crust is golden brown.
