How Celebrity Chefs Order Their Steak
BY Nicole Adams
Marc Murphy
Well-known as one of the top judges on "Chopped," Marc Murphy likes to make steak at home; however, he enjoys a rare New York strip when ordering out.
Also called strip loin, ambassador, Kansas City strip, and sometimes just strip, this cut is taken from the loin primal section of the cow, right next to the rib prime.
Geoffrey Zakarian
For Geoffrey Zakarian, Minetta Tavern is the best place to get a steak in New York. When here, he orders "a côte de boeuf for two, medium rare, salted like crazy."
Côte de boeuf is French for prime rib, and Zakarian likes it dry aged and served with roasted marrow bones. Prime rib is a tender, flavorful cut, so it's best enjoyed medium rare.
Michael Symon
Chef Michael Symon enjoys a good chuck roast or skirt steak and loves to indulge in beef cheeks. He prefers a ribeye when he's out and ordering steak at a restaurant.
Symon enjoys eating his ribeye medium rare, along with crunchy sea salt and some extra virgin olive oil. Ribeye comes from a cow's rib section, where the meat is marbled with fat.
Katie Lee
Cookbook author Katie Lee loves a ribeye as her go-to steak order and enjoys it medium. Ribeye is a well-marbled meat cut from the rib primal section of a cow.
Ribeye is usually cooked medium rare or rare but is still tender and tasty when it's cooked medium, where the internal temperature is 140 degrees F and has a bright pink center.
Alex Guarnaschelli
Cookbook author and TV personality Alex Guarnaschelli explains that she is a "medium or medium rare person generally" and adds that the cooking method matters.
She really enjoys a hard sear in a cast iron skillet with butter. Getting a crispy sear on the exterior is indeed one of the best ways to enjoy a steak.
