Whether you’re using one cheese or a mix, Gruyère can enhance the dish with its nutty yet sweet flavor, which complements the potatoes and gives the dish a nice richness.
To incorporate Gruyère, make sure to grate it fresh yourself rather than buying a pre-shredded option. This helps the cheese melt and provides the proper, creamy consistency.
If you can’t find Gruyère, you can achieve a similar flavor with a cheese like Comté, which melts well and has a similar nutty, sweet flavor with additional salty and smoky notes.
