Gordon Ramsay's Simple Trick For Making Tasty Chicken Parmesan
BY ANNA STAROPOLI
Gordon Ramsay's secret to perfect chicken parmesan lies in achieving crispy, delicious chicken by using a combination of butter and oil during the frying process.
In the case of chicken parmesan, butter improves the chicken's crispiness and richness of flavor. Just make sure that the butter you use is hot.
Ramsay's recipe for chicken parmesan uses a tablespoon of rapeseed oil and calls for frying your chicken for two and a half minutes on either side.
"Once you've gotten the color on top, start placing little bits of butter underneath," Ramsay advises, in a chicken parmesan tutorial on "The F Word."
To prepare your chicken for this step, make sure to trim it and roll it until it's even. Ramsay then gives his chicken a coating of flour, egg wash, and breadcrumbs.
After adding butter and achieving the desired color, flip the chicken and cook for under three minutes. Finish by adding sauce, mozzarella, salt, and pepper before baking.
