Gordon Ramsay Tells Us The Best Meat Blend For Burgers

For his burger patties, Gordon Ramsay uses a special meat blend. As he notes in a YouTube short, "The perfect blend is a 70-20-10 ratio — 70% chuck steak, 20% short rib, 10% fat.”
Ramsay's blend is freshly ground and seasoned with onion powder, garlic powder, salt, pepper, and chili flakes. The chef then adds an egg as a binder and blends it all.
Next, the meat is put through a cutter for even shaping. Lastly, Ramsay sears each side of the burger in a bit of oil for 30 seconds and finishes it in the oven for eight minutes.
Combining the two cuts, running them through a meat grinder, and then mixing them with fat creates an ideal burger blend, where the meaty chuck balances the short ribs’ richness.
